With freshly picked, pitted plums.
Yeast started July 31, 2000 with 1/3 can frozen limeaid and 1 c honey pastuerized in water.
August 3, 2000 - Cooked honey with water while pitting plums. Added must chiller and plums. Heated to 170 and kept hot for 10 minutes. Cooled. Poured into bucket. Added water to make 5+ gallons. Pitched yeast. Stirred and stored with a bubble-lock.
September 28, 2000 - SG 1.004 - Racked.
March 8, 2001 - Bottled, still.
