A peach melomel with Orange Blossom honey.
One kinda old packet of Lalvin EC-1118 was rehydrated at brew time.
November 24, 2001 - Heated honey and water, added peaches and other stuff including must chiller. Heated to about 160 F for 20 minutes. Cooled and poured into bucket. Added some more water, pitched yeast, topped off bucket. Stored with a bubble lock.
December 6, 2001 - Bubbling nicely. Racked. SG 1.06
September 27, 2002 - Boiled corn sugar with water. Racked mead into bucket with sugar water. Bottled.
