A pomegranate melomel. Another Unicorn Unchained / Talisman farms collaboration.
Yeast notes. 5 g Lalvin EC-1118. Rehydrated and pitched at brew time.
May 15, 2020. Weighed honey into the kettle with about 2 gallons of water and heated while stirring. When the honeywater was at 160F we added the must chiller and maintained that temperature for 20 minutes. Then used the must chiller to cool. The must went into a bucket, followed by the POM juice and more water to make 5 gallons. The must was at about 90F when the yeast was pitched. Stored in the bucket with a lid and bubble lock. GR 1.090 taken before the yeast was pitched.
May 16, 2020 - This should finish strong and dry. Already blurping away.
August 2, 2020 - racked to carboy. GR 0.993
August 30, 2020 - racked to keg to carbonate. GR 0.993, almost 13% abv. We want a fizzy finish.
September 24, 2020 - bottled.
