Brewed: October 8, 2001 Bottled: July 11, 2002 A pomegranate melomel made with half a case of RW Knudsen Pomegranate juice.
Yeast rehydrated at brew time.
Start heating honey with H2O. Add gypsum. Skim scum. Heat to 160 F, add must chiller, keep hot for 15 minutes. Turn off heat and add pomegranate juice. Cool to 100 F. Pour into carboy. Add more H2O. Pitch yeast. Top off with H2O. Store with blow-off tube.
November 24, 2001 - Racked.
July 11, 2002 - Boiled corn sugar in water. Poured sugar water into bucket, racked mead into bucket. Bottled.
