Violet flowers, picked in the snow. Every bit as yummy as Rainy Day Violets.
Ingredients:
Yeast was pre-started the morning of August 11 with 3 heaping t yeast starter and water.
August 13, 1998 - Honey heated with water. Irish moss added. Some scum skimmed. Added yeast nutrient and acid blend. Temperature climbed to 200 F. More water was added and the stove turned down to cool to 180 F. Skimmed more scum. Flowers and must chiller added. Kept at 170 F for 20 minutes. Cooled to about 95 F and poured into a carboy. More water added. OG = 1.068. Yeast pitched and carboy topped off with more water. Stored with a blow off tube.
August 26, 1998 - Racked.
October 11, 1998 - Racked, SG 1.000
January 20, 1999 - SG .996 Corn sugar boiled with 1 c Eldorado Springs water for 15 minutes. Sugar water poured into bucket and mead racked into bucket. Bottled.
